1 lb Orzo Pasta
1 English Cucumber, diced
1 pint Cherry Tomatoes, halved
1/2 Red Onion, diced
1/2 cup Kalamata Olives, halved
4 oz Feta Cheese, crumbled
1/4 cup Fresh Parsley, chopped
Salt and Pepper to taste


1/2 cup Olive Oil
1/4 cup Red Wine Vinegar
1 tsp Dijon Mustard
1 clove Garlic, minced
Salt and Pepper to taste

Cook orzo pasta according to package instructions, rinse with cold water, and drain well.
In a large bowl, mix together cucumber, cherry tomatoes, red onion, kalamata olives, and feta cheese.

In a small bowl, whisk together olive oil, red wine vinegar, dijon mustard, garlic, salt, and pepper.
