1 lb. lump crab meat
2 cups broccoli florets,
blanched 1 Granny Smith apple,
diced 1 large carrot,
grated 1/4 cup chopped fresh parsley
1/4 tsp. cayenne pepper
1/4 cup lemon juice
1/2 cup mayonnaise
Salt and pepper to taste
In a large bowl, mix together the crab meat, broccoli, apple, carrot, parsley, and cayenne pepper.
In a separate bowl, whisk together the lemon juice, mayonnaise, salt, and pepper until smooth.
Pour the dressing over the crab mixture and toss to coat.
Chill in the fridge for at least 30 minutes before serving.
