Chicken Shawarma


In a large bowl, combine the chicken, olive oil, garlic, paprika, cumin, turmeric, coriander, cinnamon, salt, and pepper. Toss to coat the chicken evenly.

Cover the bowl and marinate the chicken in the refrigerator for at least 30 minutes (or up to overnight).

Preheat a grill or grill pan to medium-high heat.

Thread the chicken onto skewers and grill for 8-10 minutes, turning occasionally, until cooked through and slightly charred.

While the chicken is cooking, mix together the Greek yogurt, parsley, mint, cucumber, tomato, and red onion in a small bowl.

Warm the pita breads on the grill for 1-2 minutes, until slightly charred and warmed through.

To serve, fill each pita with grilled chicken and top with the yogurt sauce. Serve with lemon wedges on the side.
