Nothing warms the soul like a hot bowl of homemade chicken rice soup. This hearty and comforting dish is perfect for any time of year, but especially during chilly nights or when you’re feeling under the weather.
1 lb boneless, skinless chicken breast
1 onion, chopped
2 carrots, peeled and chopped
2 celery stalks, chopped
3 cloves garlic, minced
1 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon paprika
Salt and black pepper, to taste
6 cups chicken broth
1 cup long-grain white rice
Chopped fresh parsley, for garnish
In a large pot or Dutch oven, heat a tablespoon of oil over medium-high heat.
Add the chicken breasts and cook for 5-7 minutes on each side or until golden brown and cooked through. Remove from the pot and set aside.
In the same pot, add the chopped onion, carrots, celery, and minced garlic. Sauté for 5-7 minutes or until the vegetables are softened and slightly browned.
Add the dried thyme, dried oregano, paprika, salt, and black pepper. Stir to combine.
Pour in the chicken broth and bring to a boil.
Reduce the heat to low, add the rice, and simmer for 18-20 minutes or until the rice is tender and cooked through.
Shred the cooked chicken and add it back to the pot. Stir to combine and cook for an additional 5 minutes to warm the chicken through.
Garnish with chopped parsley and serve hot.
