Who says you can’t have cookies for breakfast? These breakfast cookies are the perfect way to start your day off right.
They’re packed with healthy ingredients like oats, bananas, and nuts, and they taste absolutely delicious!

Ingredients:

2 ripe bananas, mashed
2 eggs
1/4 cup honey
1/4 cup coconut oil,
melted 2 cups rolled oats
1/2 cup chopped nuts (walnuts, pecans, or almonds work well)
1/4 cup dark chocolate chips (optional)
1 tsp cinnamon
1/2 tsp salt
1/2 cup dried fruit (raisins, cranberries, or cherries work well)

Directions:

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, mix together the mashed bananas, eggs, honey, and melted coconut oil until well combined.
Add in the oats, chopped nuts, chocolate chips (if using), cinnamon, and salt, and mix until everything is evenly combined.
Fold in the dried fruit.

Using a cookie scoop or spoon, drop the dough onto the prepared baking sheet and flatten slightly with the back of a spoon.
Bake for 15-20 minutes, or until the edges are lightly golden brown.

Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
