8 oz. rotini pasta
1 large avocado, diced
1 cup cherry tomatoes, halved
1/2 cup cooked bacon, chopped
1/4 cup red onion, diced
1/4 cup chopped fresh parsley
1/4 cup mayonnaise
1/4 cup Greek yogurt
2 tbsp. lemon juice
Salt and black pepper to taste
Cook the rotini pasta according to the package instructions until al dente. Drain and rinse with cold water.
In a large mixing bowl, combine the cooked pasta, diced avocado, halved cherry tomatoes, chopped bacon, diced red onion, and chopped fresh parsley.
In a small mixing bowl, whisk together the mayonnaise, Greek yogurt, and lemon juice until well combined. Season with salt and black pepper to taste.
Pour the dressing over the pasta salad and toss gently to coat.
Serve immediately or chill in the refrigerator until ready to serve.
