2 pounds of beef chuck roast, cut into cubes
1/2 pound of bacon, chopped
1 onion, chopped
4 cloves of garlic, minced
1/4 cup of all-purpose flour
2 cups of beef broth
1 cup of red wine
1 tablespoon of tomato paste
1 teaspoon of dried thyme
1 teaspoon of dried rosemary
1 bay leaf
Salt and pepper, to taste
1 pound of mushrooms, sliced
1 bag of baby carrots
1/4 cup of fresh parsley, chopped
In a skillet, cook bacon until crispy. Remove and set aside.
In the same skillet, brown beef in bacon grease. Transfer to slow cooker.
Add onion and garlic to the skillet and sauté until onion is translucent. Add flour and cook for 1-2 minutes.
Add beef broth, red wine, tomato paste, thyme, rosemary, bay leaf, salt, and pepper to the skillet. Bring to a simmer, stirring constantly.
Pour the mixture over the beef in the slow cooker.
Add mushrooms and carrots to the slow cooker. Stir to combine.
Cover and cook on low for 8-10 hours, or until beef is tender.
Garnish with fresh parsley and serve with your favorite side dish!
